Hot, fresh and buttery



The product of today's work. We call it lunch!

Oatmeal Wheat Bread

1 ¾ c boiling water

1 c quick-cooking oats

½ c molasses

¼ c shortening

¼ c orange juice

1 ½ t salt

2 pkgs (¼ oz each) active dry yeast

½ c warm water (110°-115°)

2 ½ c whole wheat flour

3-3 ½ c all purpose flour

Melted margarine or butter

--> In large mixing bowl, combine boiling water, oats, molasses, shortening, orange juice and salt; let stand til warm (110°-115°).

In small bowl dissolve yeast in warm water; add to oat mixture.

Add whole wheat flour and beat til smooth.

Add enough all purpose flour to form a soft dough.

Turn onto a floured board; knead til smooth and elastic, about 6-8 minutes.

Place in greased bowl, turning once to grease top.

Cover and let rise in warm place til doubled, about 1 hour.

Punch dough down.

Shape into two loaves; place in greased loaf pans.

Cover and let rise til doubled, about 45 minutes.

Bake at 350° for 40 minutes.

Remove from pans; brush with melted butter.

Cool on wire racks.

I found your blog a few weeks ago and found this recipe. We eat mainly homemade bread and I'm always looking for new recipes to try. I've made this bread twice now and we have really enjoyed it. Thanks for sharing this great recipe.

First you start with a LARGE 3-ring binder . I was able to get about a dozen of these for 50-75¢ each at a thrift shoppe, brand new. Mine are from a business complete with logo, but that's ok. 50-75¢ sure beats 8 bucks at Wal-mart. Plus mine DOES have a front pocket, in case I want to make it a bit purtier.
