Making yoghurt cheese

I have yoghurt cheese going in the fridge right now. Here's how I'm making it. You need: 1 jar of homemade yoghurt Strainer Something to catch the whey A coffee filter Sit your strainer atop your "catcher." Put your coffee filter inside the strainer. Pour your yoghurt into the coffee filter. Sit everything together inside your refrigerator. The longer you let it drain, the harder your cheese will be. Your cheese is similar to cream cheese! If it's a bit too tart, add some sweetener (honey, sugar, nectar, etc). Use it to spread on thick toast, bagels or even tortillas (the kids love the last one!).

Making yoghurt on a dehydrator

I made yoghurt yesterday. I was planning on it anyway, but I also had some soured milk that I thought I'd try for the occasion. Here is the "recipe" I used & how I did it: 4 cups slightly soured skim milk 1-1 1/3 cups dry milk powder 3-4 T local honey (optional) 2 T store bought yoghurt with live cultures Bring soured milk & milk powder ALMOST to a boil. Remove from heat before it begins to boil. (you will see tiny bubbles begin to form around the edge of the milk surface). Add yoghurt. Mix well. Add honey, mix well. Pour hot milk mixture into clean mason jars. I like the wide mouth for several reasons. One of those reasons- to make yoghurt cheese (that's my next post!!). Set 3 trays on your dehydrator & turn it on. Set your jars on the top try. Lay dehydrator lid on top, and drape a hand towel over the whole thing. Let this run for about 6-8 hours. Canning, canning & more canning!

I've been busy canning good things the past couple of weeks. I just LOVE seeing the jars all lined up on the counter, and I love even more, the pantry shelf full of home canned goodies!!! He re are some pics of the last couple of weeks good stuff: 4 qts, 2 pints spaghetti sauce, or 5 qts all together 3 pints pizza sauce 2 1/2 pints carrots 3 pints pork stew & 3 pints of twice processed pinto beans 13 pints pinto beans 23 jars total of the beans, pork stew & carrots.

Apple Cider Vinegar & other healthy choices

One of my fave new dietary changes!!! I've been taking 2t of ACV & 2t local honey in 1 cup water. I'm not going to get into all the details, but let's just say it is working WONDERS on my body. I have more energy, I'm... ahem.... regular all of a sudden, my skin is clearer, among other fantastic changes. I also started juicing on Thursday. While I haven't been as loyal with this, I know every little bit helps. Hey, one complete change at a time, right? I also have been noshing on raw veggies again- YUM!!! Back to drinking 90+ oz water again too. I was in such a slump, and decided that it was time to GET OUT OF IT!!!! On top of my dietary changes, I've also started to pray differently. I even asked for prayer from a group I like to call my friends!!! God is so good, as long as you believe, trust & try to understand (None of us have to understand, sometimes that's too hard for us humans, but trying opens a whole new world!!!). Have a blessed day.
