Today is the day....

....that the Lord hath made. I am glad, and I am re-JOY-cing in it!!! Today is one of those days. I am overwhelmed by the Holy Spirit working in my life. As I move boxes & furniture between rooms, I feel the strain on my muscles. The aches & pains which will soon ensue. I thank God for them. That I am able to do such work. That He has given me strength to get done what I need to do for my family and for HIM. He has graced me with patience & wisdom t oday. He has reminded me of His presence in my heart, my soul, my mind & my body. I am playing the music that I have here on my blog LOUDLY (My playlist is located at the bottom of the blog). It has filled my heart. I have wept today in JOY. I am reminded of the day I was baptised in the Holy Spirit & I find it hard to breathe, I feel a tightness in my throat as the tears form in my eyes. HE IS SO GOOD!!!!! I find myself pausing from my work to lift my hands in PRAISE to HIM. I pray you are in awe of our Lord today. I pr...

Herb Baked Salmon

Herb Baked Salmon vegetable oil spray 3/4 pound salmon fillet 1 tablespoon Dijon mustard 1/4 cup parsley, fresh, chopped 1 teaspoon oregano, dried 1/2 teaspoon thyme, dried 1/2 cup plain bread crumbs salt and pepper to taste 1 egg white Preheat oven to 350°. Line a baking tray with foil and spray with vegetable oil spray, Wash salmon, pat dry, and spread mustard over the top. Mix parsley, oregano, thyme and bread crumbs together. Season with salt and pepper. Blend in egg white to bind mixture together. Spread over mustard. Bake in oven for 20 to 25 minutes, depending on thickness of fillets. Remove from oven and serve on individual plates with rice. Serves 2. It was SOOOOO good. The top was crispy (I used saltines instead of bread and used 1/2 the amount dried parsley since I don't have fresh). YUMMY!!!!!

Taco Style Pork Chops with Rice & Beans (Crockpot)

6 pork chops (we decided this can also be made with chicken and steaks as well) 1 30oz can crushed tomatoes 1-2 15oz can black or red beans 2 packets taco seasoning or homemade equivalent 4 cups water 2 cups dry rice 4-6oz velveeta Mix tomatoes, beans and taco seasoning in medium bowl. Spoon 1 cup over bottom of slowcooker. Layer pork chops and alternate the 2 ending with a generous amount of sauce. Cook on high about 4 hours, spooning sauce over the chops every hour or so. The last 1/2 hour, cook rice using the rice & 4 cups water. Remove chops from slowcooker, reserving sauce. Dice velveeta and add to sauce, mixing til melted. Add cooked rice, combine well.

Strawberry Sorbet

5 cups frozen strawberries 1/4 c sugar juice of 1 small lime 1/2 cup drink mix or juice (I used Tang) Place ingredients in blender. Blenderise until well-blended & smooth. This may take a few minutes. Pour into serving dishes & freeze until serving time.

OO Wee Gooey Cake

OO Wee Gooey Cake 1 stick softened margarine 1 egg 1 pkg yellow cake mix 1 c (8oz) pecans (I chopped mine) 1 box powdered sugar (I used 1lb from a big bag) 1 pkg softened cream cheese (I used the 8oz 1/3 fat) 2 eggs Mix in oblong glass cake pan with fork, the margarine & cake mix until it reaches the texture of cornmeal. Add egg & stir well. Add pecans & mix well. Flatten in pan. Cream together the sugar, cream cheese & eggs. Pour this over the cake mix in pan. Bake at 350ยบ for 45-50 minutes untill a medium golden brown. This cake will fall upon cooling.

The progression of a set of black eyes

This was my Sunday, June 22. We got up, did a few things around the house, left at 11:15 to go to my Mum & Dad's house. Got there about 12:40, left about quarter after 3. We ate lunch, and my Dad & Hubba showed off their new vehicles to each other (my Dad got a new to him Escape). Boys!!! LOL... Got to MIL's about 20 mins later, hung out, ate dinner, and I was already e.x.h.a.u.s.t.e.d. because I'd been up the night before because it was storming bad!! I wanted to leave by around 6. After dinner I looked up & it was already 6:30. I told Hubba it was 6:30, and he said "We'll eat dessert & get out of here." About 10 mins later, I hear Kee scream & start crying & I RAN from the kitchen to the room he was in, Tris was in the doorway & I was screaming at him "MOVE!!! GET OUT OF THE WAY!!!!!" As I came into the room, there was blood going down Keenan's nose & I screamed "OH ****." So I swept him up & ran in...
